Tzatziki Tomato Salad

It’s been far too long since I have posted, so here’s an easy one.

This recipe is made of almost all Trader Joe’s ingredients and takes 5-10 minutes.

Since the dressing is made with yogurt, it is a nice creamy dressing that is good for you too.

Warm Naan, Pita, or other type of flatbread (I LOVE TJ’s Naan because it is doughy and can work as a pizza crust or dipping bread, but it has to be warmed)

  • Trader Joe’s Tzatziki (or other good brand, or make your own: Greek yogurt, cucumber, garlic, lemon, dill, salt/pepper)
  • Good Extra Virgin Olive Oil
  • Lemon Juice
  • Salt and/or Garlic Salt
  • Pepper

  • Arugula
  • Grape or Cherry Tomatoes
  • Shredded Parmesan
  • Thinly sliced cucumber (optional)
  • Thinly sliced red onion (optional)
  • Crumbled Feta (optional)

Toss the salad with the dressing and serve on top of the warm flatbread.

Next time I make this, I may serve on top of a Greek “Pizza” that has melted feta, with a touch a crushed red pepper flakes, and maybe even some grilled red onions.

Would go great with a crisp white wine.

  1. Great idea! Perfect summer salad! As for the wine, I know just the one . . . my kids gave it to me; it’s from Santorini . . . Assyrtiko Argyros . . . delightful!(Now, I just need to get Mom to make the salad, and then find that wine).Paul — your food photography is superb.
