Making homemade chocolate cake doesn’t get any easier. Use a blender to mix ingredients and then pour into your prepared pan.
This recipe makes half of a normal, boxed, cake mix: one 9 inch round, so just double if you want the normal box size. But it is nice to be able to make half the size, so that you don’t feel you have to eat quite as much.
Keep the following ingredients on hand so that you can make a quick chocolate cake at a moment’s notice.

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated white sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup hot water
1/2 cup vegetable oil
1 large egg
1 1/2 teaspoons vanilla extract
Blend all of the ingredients in your blender (yes, your blender). Make sure to give some time for the hot water to melt the sugar and allow it to cool a bit before adding in the egg (so the egg doesn’t start to cook). Scrape down the sides so that everything gets blended in, and then pour into your greased pan(s).
If baking a single batch in a 9 inch round pan, then bake at 350* for about 15-20 min. I tend to take it out of the oven once a toothpick comes out somewhat clean, but just short of fully cooked.
